Olive Oil Cake
I’m a sucker for a slice of cake. Chocolate, vanilla, red velvet. A slice, a mound with a molten center, or a cupcake. Something about cake makes me feel like there’s something to celebrate.
I discovered olive oil cake a few years back. I remembered being surprised with how light the cake is considering it uses olive oil for butter. I haven’t made an olive oil cake in a long time, but when I saw the fresh berries starting to appear in the markets, I felt it was time to bring this one back.
Topping a slice with some fresh berries is an easy yet elegant dessert that your friends will love!
Note: This is the New York Times recipe. I've found it is the best recipe and makes a great cake every time.
