Peanut Butter Cookies

Are you craving a cookie snack? Are you tired of chocolate chip? I just love these peanut butter cookies as an alternative to chocolate chip. They are light and chewy with that great peanut butter flavor. They remind me of the cookies my grandmother used to make!


 

Classic Peanut Butter Cookies

Makes 36 cookies


1 cup brown sugar, firmly packed

½ cup unsalted butter, softened

½ cup peanut butter

1 egg

1 teaspoon vanilla

1 ½ cups flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

sugar, for rolling

1. Heat oven to 350°F.


2. Combine brown sugar, butter and peanut butter in bowl. Beat on medium speed until light and fluffy. Add egg and vanilla; continue beating until well mixed. Add flour, baking powder, baking soda and salt. Beat at low speed until well mixed.


3. Shape dough into 1 1/2-inch balls; roll in sugar. Place 2 inches apart onto cookie sheets; flatten balls in criss-cross pattern with fork dipped in sugar. Bake 8-10 minutes or until edges are lightly browned.
