Penne with Peas and Asparagus
As April winds down, so will my focus on spring vegetable recipes (especially peas and asparagus!). This last recipe is a primavera of sorts but is a bit richer in flavor. It does have a cream sauce but it is light, and yet the dish can still be a great weekend, date-night dinner. Pair with a glass of wine and you’re all set!
Note: I use whole wheat penne, but you can use any pasta you like (whole wheat or not). Also, you can make this vegetarian by omitting the pancetta.
