Quesadillas



Asparagus Quesadillas

If you're looking for a quick, light meal, quesadillas can do just the trick. You can stuff these with just about anything you have in your fridge/pantry, too. I often keep some tortillas in the fridge for those times when I'm in a hurry and need a quite bite. Spread some leftover chicken, roasted vegetables or beans with a little cheese, top with some salsa or sliced avocado, and you have something ready in just a few minutes.

On days when I have a bit more time, but I still want something light to eat, I will make quesadillas like the recipe below. These spicy asparagus quesadillas are great when asparagus is in season and they have just the right kick to make them fun to eat.

If you're not a fan of asparagus or can't find any at your local farmers market/store, you can substitute any vegetable you like. Zucchini, portobello mushrooms, or even tofu make good substitutions.

Note: I know the recipe doesn't have cheese in it which might make you ask if this really is a quesadilla. If you are missing it, feel free to add!
