Summer Grilling
It's hard to believe it is June already! The summer months are upon us and it is time to kick the grilling season into high gear. Something that absolutely love to do during this season is grill vegetables. There's nothing like going to the farmer's market (or my garden) and finding the freshest vegetables of the day and then bringing them home, tossing them in some olive oil, salt, and pepper, and grilling them for just a few minutes until they get that smokey, roasted flavor.
I like to grill lots of vegetables at once to make a hearty and healthy side side to pretty much any kind of protein. If you want to make a main dish instead, toss with some cooked barley or farro.
There are lots of variations you can do with grilled vegetables, too. If you have an herb infused oil, use that for a little extra flavor. Or top with a little fresh basil or oregano for a little more Italian vibe.
It's okay if you have leftovers, too. The grilled vegetables are great to add to a lunch salad or make a wrap with some goat cheese and spinach.
